Valentine's Day is coming up... it's the perfect time to treat yourself & your loved ones to some decadent chocolatey goodness!
This is indulgence you can feel good about eating... A rich, creamy mousse full of protein, healthy fats, and fiber with no refined sugar or dairy.

Prep Time: 5 minutes
Cook Time: 8 minutes
Chill Time: 8 hours
Makes: 5 mousse cups
Ingredients:
- 1 14oz can full fat coconut cream (I like to use Trader Joe's Organic Coconut Cream since it has no guar gum or other fillers)
- 1/2 Cup Raw Cacao Powder
- 1/2 Cup Pure Maple Syrup
- 1/4 Tsp Sea Salt
- 2 Tsp Vanilla
- 1/4 Cup + 2 Tbsp Almond Butter
Combine coconut cream, cacao powder, and maple syrup in saucepan over low heat. Stir until smooth (use whisk if needed to get out cacao clumps). Continue slowly stirring over heat until small bubbles form, then remove from heat.
Add salt, vanilla, and almond butter and stir until smooth. Pour into 4 small bowls and set in refrigerator. Pudding will be set within 2-3 hours, but will have the thickest, creamiest texture and fullest taste when you wait overnight.
Top with extra almond butter, coconut, chopped almonds, chocolate shavings, berries, or any other garnishments if desired and ENJOY :)
